Salmon and Pea Quinoa

    I'm rying to eat more whole grains and fish in my diet and wanted to try using quinoa. It actually has a really nutty flavour and is quite filling. Enjoy!

    Serves: 4 

    • 250ml water
    • 125g quinoa
    • 1 fish stock cube
    • 4 salmon steaks
    • 500g fresh or frozen peas

    1. Add 250ml water to a pot and boil the quinoa for 15 minutes, or until the water evaporates.
    2. Fill another saucepan with water and add the fish cube. Bring to the boil over medium heat and add the salmon steaks, cook for 5 minutes. Add the peas in the last minute or so to cook. Drain.
    3. Transfer the quinoa to a serving bowl, add the peas and salmon.
