Creamy Smoked Salmon Starter

    This is a very easy recipe and a simple starter for dinner parties or Christmas. It's important to drain as much water out of the cucumber before serving - otherwise, it could be too watery.

    Ingredients
    Serves: 6 

    • 1 cucumber
    • pinch of salt
    • 1 tablespoon red onion, minced
    • 200g plain yoghurt
    • 1 pinch of paprika or freshly ground black pepper
    • 2 slices smoked salmon, diced

    Method

    1. Wash the cucumber and cut off a few slices to keep for garnish, then peel and remove the seeds. Grate the peeled cucumber into a bowl lined with kitchen paper. Add a pinch of salt and leave to drain for 30 minutes.
    2. Remove the kitchen roll paper, stir in red onion, yoghurt and paprika or pepper. Add the smoked salmon
    3. Spoon the mixture into small glasses and garnish with remaining cucumber slices.
