Quinoa Seafood Salad

About this recipe: Quinoa is quite filling and it goes really well with citrus and seafood. Apple and cucumber add a nice crunch to this healthy salad.


Serves: 2 

  • 200g quinoa
  • 1 tablespoon orange zest
  • 4 tablespoons Greek style yoghurt
  • 1 tablespoon lemon juice
  • 2 seafood sticks, diced
  • 1/4 cucumber, peeled
  • 1/2 Granny smith apple, diced
  • 4 crayfish tails or prawns

  1. Cook the quinoa according to the package instructions; drain and season with salt and pepper. Cool slightly, then mix in orange zest.
  2. Combine the yoghurt, lemon juice and seafood sticks in a bowl.
  3. In a glass or serving plate, layer the quinoa, then yoghurt mixture, then some apple and cucumber cucumber. Top with crayfish tails or cooked prawns.
