Spinach and cashew salad

    A light and healthy mix of fresh spinach leaves, tomatoes and nuts, with a splash of balsamic to sweeten.

    Serves: 2 

    • 20g young spinach leaves
    • 75g cherry tomatoes
    • 50g cashews or pine nuts
    • 75g baby carrots
    • 1 teaspoon balsamic vinegar
    • 75g hard cheese, such as Cheddar or Manchego, cubed

    1. Add the young spinach leaves to a serving plate then add the other vegetables, nuts and cheese.
    2. Sprinkle over the balsamic vinegar. Serve.
