Spicy seven layer dip

    This spicy layered party dip looks great and tastes even better. Use a good quality salsa and serve with plenty of tortilla chips.

    Serves: 32 

    • 200g shredded lettuce
    • 400g tin black beans, rinsed and drained
    • 2 fresh red chillies, chopped
    • 4 tablespoons sliced spring onions
    • 225ml soured cream
    • 2 fresh jalapeno or green chillies, finely diced
    • 1 teaspoon lime zest
    • 225g chunky tomato salsa
    • 1/2 avocado - peeled, stone removed and diced
    • 90g grated Cheddar cheese
    • 60g chopped black olives
    • 1 tablespoon chopped fresh coriander

    1. Layer shredded lettuce on a large serving platter.
    2. In a medium bowl, stir together black beans, red chillies and spring onions. Spoon the mixture on top of the lettuce. Gently spread soured cream over beans. Sprinkle with jalapeno chillies and lime zest.
    3. Drain any excess liquid from salsa. Place salsa in a medium bowl. Stir in avocado. Spoon the mixture over soured cream layer. Sprinkle with cheese. Top with black olives and coriander. Serve immediately, or chill in the refrigerator.

    This is fantastic! I love the black beans in place of refried. I have made this several times, and it was the hit of every party - everyone requests it now.
