Chinese deep-fried tofu in red sauce

    Squares of firm tofu are deep fried and served in a thick Chinese red sauce made of star anise, soy sauce, sesame oil, sugar and fresh ginger. So yummy!

    Serves: 6 

    • 100ml vegetable oil for frying
    • 500g firm tofu, sliced into 3cm squares
    • 250ml water
    • 3 tablespoons soy sauce
    • 1 1/2 tablespoon sugar
    • 1 whole star anise
    • 1 (5cm) piece fresh ginger, peeled and grated
    • 2 teaspoons sesame oil
    • salt, to taste
    • 1 spring onion, finely chopped

    1. Heat oil in a deep pan or wok over medium-high heat; use chopsticks to add tofu squares in small batches and fry until golden brown. Remove tofu with a slotted spoon and drain on kitchen roll.
    2. Heat water, soy sauce, sugar, star anise, ginger and sesame oil in a frying pan or wok; bring to the boil and simmer until well reduced.
    3. Add fried tofu cubes and cook over very low heat until heated through; serve with freshly chopped spring onions.
