Chinese five spice braised peanuts

    Peanuts are simmered with Chinese five spice seasoning, star anise and salt to create a comforting Asian starter or addition to soup, congee or salads.

    Ingredients
    Serves: 6 

    • 500g raw red skin peanuts, soaked for at least 1 hour
    • 1.5L boiling water, or as needed
    • 2 teaspoons Chinese five spice powder
    • 2 teaspoons salt
    • 1 whole star anise

    Method

    1. Rinse the peanuts; place in a pot and pour in enough water to cover. Boil peanuts over medium heat for 5 minutes; drain.
    2. Season peanuts with five spice, salt and add star anise; pour in boiling water to cover and simmer over low heat until soft, about 3 hours.
    3. Remove peanuts with a slotted spoon and place on a serving dish; spoon some cooking liquid over the dish if necessary.
