Chinese pork belly, ginger and celtuse salad

    A Chinese salad or starter dish made with slices of cooked pork belly and celtuse leaves (also known as asparagus lettuce) with a flavourful fresh ginger dressing. You can find celtuse quite easily in Asian supermarkets. The leaves are great in a salad while you can use the stalks in a stir fry. Serve this salad with a cold Chinese beer.

    Serves: 1 

    • 25g freshly grated ginger
    • 5 teaspoons rice vinegar
    • 40g celtuse leaves (asparagus lettuce), sliced
    • salt, to taste
    • 200g cooked pork belly, cubed
    • 1 teaspoon sesame oil
    • 1 teaspoon soy sauce
    • 5 teaspoons water

    1. Place grated ginger in a small bowl; add vinegar and stir to combine. Set mixture aside for a few minutes.
    2. Place lettuce in a bowl and season with salt; top with cooked pork belly cubes.
    3. Whisk sesame oil, soy sauce and water into ginger-vinegar mixture until well combined; pour dressing over the pork and lettuce. Mix well and serve.
