Baked Whole Fish

    A simple recipe for cooking a whole fish flavoured with capers, garlic and delicate herbs.

    Serves: 2 

    • 1 whole fish (such as snapper or sea bass)
    • pinch salt
    • 4 to 5 sprigs thyme, leaves removed and crushed
    • 1 clove garlic
    • 2 teaspoons capers
    • 3 bay leaves
    • olive oil
    • 2 to 3 sprigs additional thyme (optional)
    • lemon or lime wedges, to serve

    1. Preheat the oven to 220 degrees C / gas mark 7.
    2. Clean fish and remove scales, then clean out the gills and internal organs (or ask your fishmonger to do it!). Sprinkle both side of the fish evenly with salt and crushed herbs and gently rub in.
    3. Place sliced garlic, capers, bay leaves (and more thyme if you like) inside the fish.
    4. Coat the fish with olive oil, and bake until it is golden brown, about 25 minutes depending on size.
    5. Serve the baked fish, sprinkled with a little left-over herbs and accompanied by lemon or lime wedges.
