Japanese Salted Chicken Wings

    Crispy, fried, salty chicken wings - Japanese style! Delicious as a starter or snack eaten hot with soy sauce and fresh lemon juice.

    Serves: 4 

    • 400g chicken wings
    • 1 tablespoon sake (Japanese rice wine)
    • 1/2 teaspoon dashi (Japanese seasoning)
    • 1/2 teaspoon salt
    • 1 tablespoon chopped garlic
    • 1 teaspoon freshly chopped root ginger
    • 1/2 tablespoon sesame oil
    • 3 tablespoons cornflour
    • salt
    • black pepper

    1. Combine chicken wings with sake, dashi, salt, chopped garlic and minced ginger; marinate for at least 1 hour.
    2. Heat oil in a deep fat fryer or deep pot until it reaches 180 degrees C.
    3. Coat the marinated wings with cornflour and fry until crispy brown and crunchy (approximately 10-15 minutes depending on size of chicken wings).
    4. Remove from oil and sprinkle with salt and a little black pepper to finish.
