340g (12oz) potatoes, peeled and cut into chunks, or mashed potato, or enough to cover dish

28g (1oz) plain flour
300ml (1/2 pint) milk
57g (2oz) frozen peas, defrosted
113g (4oz) sea bass, cut into cubes
113g (4oz) prawns, peeled
57g (2oz) cheese, grated

Preheat the oven to 200 C / Gas 6, or preheat the grill for medium high heat.
Place potatoes in a saucepan, cover with water and bring to the boil. Cook potatoes until tender, about 15 minutes. When cooked, drain, mash, butter and season with salt and pepper.
Melt the 28g butter in a saucepan over medium heat and stir in flour. Cook flour for a minute, remove pan from heat, then gradually add milk. Put pan back on heat, stir until the mixture thickens, then add peas, sea bass and prawns.
Spoon mixture into a greased ovenproof dish. Cover with mashed potato, spread over with a fork, then sprinkle cheese over the top.
Put under grill for 15 to 20 minutes until slightly brown, or crisp if you prefer. Alternatively, bake in the preheated oven until bubbly and heated through, about 20 minutes.
Other fish can be used such as Coley and is adjustable. Also if grilling, prawns may need extra time.
