Fluffy chocolate chip cookies

    If you like cookies that are soft, fluffy and a bit like little cakes then you will love this recipe. It is easy to make substitutions such as nuts instead of chocolate.

    Makes: 24 cookies

    • 310g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 220g dark brown soft sugar
    • 100g caster sugar
    • 225g butter, softened
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 300g semisweet chocolate chips

    1. Preheat oven to 170 C / Gas 3. In medium bowl combine flour, bicarbonate of soda and salt. Mix well with wire whisk. Set aside.
    2. In a large bowl blend sugars. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla extract, and mix until just blended.
    3. Sift in half of the flour mixture and blend. Add chocolate chips and the rest of the flour mixture, blend until just mixed. Do not overmix.
    4. Scoop spoonfuls of mixture onto an ungreased baking tray, keeping the scoops about 3 centimeters apart.
    5. Bake until golden brown, about 15 minutes. Transfer cookies immediately to a cool surface with a spatula.


    If you don't have brown sugar in the house, use 200g caster sugar and 170g maple syrup. If you don't have either of those 300g sugar will do.
