About this recipe: This makes a fruit cake into that something special. With a moist fluffy texture, this cake is one you will want to make again and again. It has an aroma all of its own.

Makes: 2 small loaf tin sized cakes

  • 450g plain flour
  • 1 teaspoon nutmeg
  • 1 teaspoon mixed spice
  • 1 pinch salt
  • 1 tablespoon baking powder
  • 125g butter or margarine
  • 125g sultanas
  • 2 eggs
  • 450ml Theakston Old Peculier®

  1. Preheat the oven to 180 C / Gas 4. Line baking tins with greaseproof paper.
  2. Sift the flour, nutmeg, mixed spice, salt and baking powder into mixing bowl or food mixer.
  3. Rub in butter or margarine until all the butter or margarine is blended into the dry ingredients.
  4. Add the sultanas and 2 eggs and mix, then add the Old Peculier and mix until you have a creamy mixture. I like to give this around 5 minutes in the food mixer. Put half the mixture into each tin.
  5. Bake in the centre of the preheated oven for two hours. Take out of the tins, but let them cool for at least 30 minutes before removing the baking paper.

Hi Was this recipe supposed to have sugar of some sort in it?? There was none in the recipe I did leave it out but thought it was a bit unsweet. Another recipe I found from another source did have sugar. - 15 Feb 2013
