Beetroot feta salad

    Beetroot and feta - two ingredients that are a match made in heaven. The sweetness of the beetroot goes so well with the piquant sourness of the feta. Add olive oil, salt, pepper... and there's little else you need to make a very elegant and tasty salad, which works particularly well as a starter.

    Makes: 4 starter-sized portions

    • 6 beetroots, boiled and peeled
    • 1 tablespoon extra-virgin olive oil
    • 1 tablespoon good quality balsamic vinegar
    • 1 pinch dried oregano
    • sea salt and freshly ground black pepper to taste
    • 100g Greek feta cheese, crumbled

    1. Dice the beetroot into 2cm chunks and place in a bowl with the olive oil, vinegar, oregano, salt and pepper. Give it a good stir.
    2. To serve, spoon salad on to serving plates and sprinkle with the feta cheese.

    Some tasty additions

    If you want to get creative, try adding: toasted walnuts; toasted pine nuts; finely chopped fresh parsley or mint (or both); or tinned chickpeas.


    If you're lucky enough to get the beetroot greens with your beetroots, try shredding the greens into very thin ribbons and sprinkling over the salad for colour and flavour.
