About this recipe: This compote requires no cooking, preserving every bit of goodness. Serve on meringue nests with whipped cream for a refreshingly light and sweet summer dessert.

Ingredients
Serves: 5 

  • 375g (13 oz) strawberries, quartered
  • 350g (12 oz) blueberries
  • 275g (10 oz) blackberries
  • 300g (11 oz) raspberries
  • 100g (4 oz) red currants
  • 1 tablespoon caster sugar
  • 3 tablespoons finely chopped fennel greens

Method

  1. In a large bowl combine strawberries, blueberries, blackberries, raspberries and red currants. Sprinkle with sugar and gently stir in fennel greens. Refrigerate for about 20 minutes. Serve cold.
