Citrus Cos Salad

    Packed with orange and grapefruit segments and a lemon dressing - this vitamin packed salad is bound to improve your mood!

    Serves: 4 

    • 1 lime - zested, peeled and sliced
    • 2 mandarin oranges - peeled and sectioned
    • 1 orange - zested, peeled and sectioned
    • 1 grapefruit - peeled and sectioned
    • 1 shallot, diced
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1 head romaine or cos lettuce, torn

    1. In a bowl, mix the lime zest, orange zest, shallot, lemon juice, olive oil and salt. Add the fruit and toss well. Arrange dressed fruit on a bed of lettuce and serve.

    This was nice and tasted light. I imagine the taste will depend greatly on the quality of the citris. Also freshly ground black pepper is good.     Easy and excellent I used chopped iceberg lettuce... For an extra taste garnish with a few shrimp or a little flaked cooked whitefish marinated in some lime juice... And/or add a handful of dried cranberries for a colour contrast...  -  09 Nov 2007  (Review from Allrecipes US | Canada)
