I used jam in the middle, too, and even a cheeky Flake® bar on top. I used a knife to decorate the cupcakes, and I added quite bit of top so it looked like a whipped ice cream and added some sprinkles! If you have loads of frosting left, you can keep it in a container in the fridge for up to a week.
