Bread maker banana pecan loaf

    This is a converted recipe from my mom's baking repertoire. It is quick and easy to make. Although it bakes for longer in the bread maker than in the oven, the taste seems to be improved.

    Makes: 1 Loaf

    • 120g butter
    • 220g light brown soft sugar
    • 2 eggs
    • 60g coarsely chopped pecan nuts
    • 3 large or 4 small bananas, mashed
    • 256g self-raising flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon bicarbonate of soda

    1. In a food processor fit the steel blade and cream together butter, sugar and eggs until light and fluffy.
    2. Fit plastic blade to processor. Add nuts and mashed bananas and pulse until just combined.
    3. Sift flour, salt and bicarbonate of soda. Add to the food processor and pulse until combined.
    4. Put the mixture in to the bread maker. Use cake program. I use #10 program. Start the machine.
    5. When baking is complete, test cake with a skewer. If the skewer comes out clean, remove the pan from the machine and let it cool down before turning the loaf out.
    6. As machines differ, it may be necessary to use extra time if your loaf is undercooked.

    Lovely lovely cake but did take forever to bake. I put everything in breadmaker in usual liquid first and flour with bicarbonate of soda last but needed about 2 hours. Will try again with less bananas and try to equate with a recent success as per my Tower machine's programme.  -  01 Apr 2018

    Well, just tried this recipe in my breadmaker, I mixed the ingredients in a bowl and added to breadmaker, came out fab, will make again Thanks  -  19 Sep 2013
