Apple and chocolate chip loaf cake

    Chunks of apple and chocolate go together surprisingly well in this moist loaf cake. All my friends love it, even those who don't normally like cakes with fruit in!

    Serves: 8 

    • 225g (8 oz) self-raising flour
    • 1 pinch salt
    • 110g (4 oz) butter
    • 3 to 4 eating apples
    • 150g (5 oz) milk or dark chocolate
    • 110g (4 oz) sugar
    • 1 egg
    • 1/2 teaspoon vanilla extract
    • 5 to 6 tablespoons milk

    1. Preheat the oven to 180 C / Gas 4. Grease and line the bottom of a small loaf tin with baking parchment.
    2. Sift together the flour and salt, and rub in the butter.
    3. Peel, core and chop the apples into 1cm chunks. Chop the chocolate into small chunks. Stir the apples, chocolate and sugar into the mixture, and make a well in the centre.
    4. Beat the egg with the vanilla extract and 5 tablespoons milk. Gradually work these into the dry ingredients to get a dropping consistency, adding a little more milk if necessary. Pour into the tin and smooth out the top.
    5. Bake in the preheated oven until a skewer comes out clean, about 1 1/4 hours.


    A slice of this cake also works well as a dessert, served warm with custard or ice cream!

    I needed something easy to bake with my 3 yr old daughter, and had apples from the garden too. We baked it and took along to a charity coffee morning and it was super popular! Most people didn't know I had made It so the comments weren't just to flatter me. It came out very moist and dense so a good stodgy cake or pudding option. Easy peasy pleaser!     very delicious and so easy to make, i added some pear and some yoghurt raisins and it tasted like apple pie with toffee. although the pear made it extremely moist and so knife didn't come out dry, so cooked for a while longer just to be on the safe side, but would easily make just as is.
