Sticky honey and mustard sausages

    A quick and easy one-pan recipe that's great for the whole family. Serve with baked or mashed potatoes and veg, drizzling the sauce over the potato.

    Serves: 4 

    • vegetable oil, for frying
    • 8 sausages
    • 2 teaspoons French mustard
    • 3 dessertspoons clear honey
    • 3 medium onions, finely chopped
    • 300ml (1/2pt) chicken stock

    1. Heat a little oil in a wok or large frying pan, over a medium heat. Add the sausages and prick them so they don't burst.
    2. When the sausages begin to sizzle, add 1 teaspoon of the mustard and 1 dessertspoon of the honey.
    3. Gently fry the sausages in the honey and mustard mixture until they are lightly browned all over, then add the chopped onions and stir-fry until the onions are tender and just beginning to brown.
    4. Add the stock and the remaining 1 teaspoon mustard and 2 dessertspoons of honey. Increase the heat to medium high and simmer, stirring, until the stock has reduced to a thick, sticky sauce, about 10 minutes. Serve immediately.

    This would have been delicious if I hadn't overdone the honey, my fault! Added some chipotle sauce to reduce the sweetness and still enjoyed. I will definitely be making this again with the proper amounts!  -  02 Aug 2012
