Thick veg soup

    A thick hearty vegetable soup made with fresh or frozen vegetables, including peas and sweet potatoes. Add some chilli flakes for spice, if you like.

    Serves: 6 

    • 2 sweet potatoes
    • 4 small white potatoes
    • 150g peas, fresh or frozen
    • 100g cabbage, sliced
    • 150g runner beans, fresh or frozen
    • water to cover
    • salt and pepper
    • 1/4 teaspoon chilli flakes (optional)
    • 1 garlic clove

    1. Peel and cut the potatoes into quarters - add to a saucepan.
    2. Add other vegetables to the pan. If using fresh peas, shell them.
    3. Pour in enough water to cover. Add salt and pepper, chilli flakes and garlic clove.
    4. Bring to the boil, simmer until veg is soft, let the pan cool for around 5 minutes. Scoop out add to blender as well as the juice and blend. The soup will be thick and green in colour, and very tasty.

    Serving suggestion

    Serve hot with a crusty roll.

    Altered ingredient amounts. also add few cooked beef cubes for extra meaty flavour before blending  -  02 Mar 2011
