Layered Cherry Fool

    This is a twist on a traditional fool, which is spectacularly easy to make and looks pretty to boot. The bits of shop-bought sponge make it reminiscent of a trifle. Using tins of cherry fruit filling and a mix of cream cheese, whipped cream and vanilla, this fool is simple and gorgeously delicious.

    Serves: 12 

    • 3 (410g) tins cherry fruit filling
    • 75g caster sugar
    • 60g plain flour
    • 550g cream cheese
    • 1 teaspoon vanilla extract
    • 300ml whipped cream, whipped to stiff peaks
    • 1 shop-bought sponge cake

    1. In a saucepan, combine cherries, sugar and flour. Bring to the boil over medium-high heat, stirring constantly. Continue to boil for 5 minutes. Remove from heat and set aside to cool.
    2. In a large bowl, beat cream cheese and vanilla until smooth. Fold in whipped cream. Pour half of the cream cheese mixture into a glass dish. Take the other half, and fold together with half of the cooled cherry mixture.
    3. Crumble the sponge cake and sprinkle evenly over the top of cream cheese mixture in dish. Spread remaining cream cheese and cherry mixture over cake. Cover top with the remaining cherry mixture. Refrigerate for at least 5 hours.


    You can make individual fools by dividing the mixture between individual serving glasses. Make sure you use clear glasses, as the layering makes for a lovely presentation!
