Ingredients

- 2 tablespoons sunflower or vegetable oil
- 1 leek, chopped
- 1 onion, chopped
- 3 medium carrots, chopped
- 1 small or 1/2 large swede, chopped
- 1/2 teaspoon sweet paprika
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1/2 teaspoon basil
- 1/2 teaspoon rosemary
- 1/2 teaspoon minced garlic (optional)
- 450g (1 lb) stewing steak
- 1/3 tin chopped tomatoes or tomato soup
- 1/2 beef stock cube
- 300ml (1/2 pint) boiling water
- Dumplings
- 110g (4 oz) self raising flour
- 55g (2 oz) beef suet
- 5 tablespoons cold water
- 1 teaspoon mixed herbs (as above)

- Turn on slow cooker to high.
- Put 1/2 of the oil into a frying pan and add chopped leeks and onions over medium heat. Stir. Once soft, add chopped carrots and swede.
- Add sweet paprika, oregano, thyme, basil and rosemary, stir for around 5 minutes til softened but not brown. Add garlic here if using.
- Place the vegetable mixture into slow cooker.
- Add rest of oil to frying pan, then beef, stir until sealed. Add the beef to the veg mixture in the slow cooker.
- Stir in either tomatoes or tomato soup - my kids like soup but not tomatoes! Stir stock cube into boiling water, add to slow cooker, stir, place lid and wait!
- About halfway through cooking make dumplings: Mix flour, suet, salt and herbs with cold water.
- Divide mix into eight ball shapes. Place on top of stew in the slow cooker and continue cooking with the lid on till dumplings are finished.
Serving suggestion
Serve with mashed potatoes.

I've just put this recipe in the slow cooker, so when I warm it up for tomorrow's dinner I'll put it in the oven with the dumplings... I hope. What would you suggest as warming up and dumpling getting done time? I've never made dumplings so... - 18 Nov 2014

Loved it however I did add a splash of beef bouginon to the stock mix and a good dash of Worcester Sauce. I swapped the suede for a large sweet potato as I didn't have suede! I added a handful of frozen sweetcorn too as I love my veggies. Fabulous recipe.. Thanks ! - 01 Feb 2015
