About this recipe: Yummy pasta bake, easy to throw together, great for students, low-cost and full of nutrients to help study!!!

Serves: 6 

  • 250g pasta
  • 1 medium onion, finely chopped
  • 3 to 4 garlic cloves, finely chopped
  • oil as needed
  • 4 chicken breast fillets, cut into bite size pieces
  • 2 tablespoons tomato puree
  • 1 tin chopped tomatoes
  • 2 teaspoons dried oregano, plus more for topping
  • 2 teaspoons caster sugar
  • 1/2 bag spinach
  • grated cheese

  1. Preheat the oven to 180 C / Gas 4. Follow instruction on pack to cook pasta.
  2. Sauté the onions and garlic in a little oil.
  3. Add the chicken to the onion and garlic, keep it moving around the pan until it is all sealed (white). This should take about 10 minutes.
  4. Add the pureé, chopped tomatoes and oregano. Simmer for 5 minutes. Mix in sugar. The sauce may need a squirt of tomato ketchup to enhance the taste.
  5. Add the spinach; stir till it reduces down. It may look like a lot but it will reduce down!
  6. Put the pasta in a baking dish, add the sauce. Mix until all the pasta is covered.
  7. Top with grated cheese and sprinkle with a little oregano.
  8. Bake in the centre of the oven until golden brown, about 25 minutes.

Serving suggestion

Serve with garlic bread.

lovely, took a bit longer to prepare than indicated on recipe but it was lovely. The tomatoes and spinach gave the dish a really Mediterranean look. Would make it again - 11 Feb 2013
