Spicy couscous

    Middle Eastern spices make a lively couscous. Raisins and pine nuts add texture and flavour. This dish works warm as a side dish, or can be served cool as a salad.

    Serves: 4 

    • 520ml hot vegetable stock
    • 500g couscous
    • 1 teaspoon ground cumin
    • 2 teaspoons ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon paprika
    • 2 teaspoons dried parsley
    • 1 handful toasted pine nuts
    • 1 handful chopped parsley
    • 1 handful raisins or sultanas

    1. Pour the vegetable stock over the couscous. Cover couscous and let rest for 10 minutes.
    2. Mix the spices and dried herbs together.
    3. Stir the spice mixture, pine nuts, chopped parsley and raisins into the couscous. Mix everything together, ensuring the couscous is well flaked.
