    About this recipe: These Maltese biscuits “Biskuttini tar-Raħal” or "Village Biscuits" in English, were traditionally served during special occasions such as the christening of a baby. They would be decorated on top with swirls of pink icing for a baby girl or pale blue for a boy. I just find them great with a cup of tea and babies seem to love them, too.

    Malta Island, Malta

    Ingredients
    Serves: 12 

    • 3 eggs
    • 225g (8oz) caster sugar
    • 1/2 orange, rated zest only
    • 1/2 lemon, grated zest only
    • a few anise seeds, crushed (or a few drops of anisette)
    • 225g (8oz) plain flour

    Method
    Prep:30min  ›  Cook:20min  ›  Extra time:10min cooling  ›  Ready in:1hr 

    1. Preheat the oven to 230 C / Gas 8.
    2. Separate the eggs and beat the whites until they are stiff.
    3. Add the sugar a little at a time, whisking well between each addition.
    4. Put in the yolks, mix again, and then stir in the grated peel and crushed seeds. Fold in the flour.
    5. Shape the dough into ovals, using two spoons, and place them on a tray scattered with semolina.
    6. Place the tray in the preheated oven. Immediately turn down the heat to 190 C / Gas 5. Bake until they are a light golden colour, about 20 minutes.
    7. Decorate the biscuits with swirls of icing.
