Tangy tomato salsa

    Delicious tomato salsa with a chilli and lime kick, a perfect starter for barbeques. Serve with tortilla chips, barbequed meats, or pita bread as a sauce or a dip.

    Serves: 4 

    • 1 red onion, chopped
    • 450g tomatoes, quartered
    • 1 large garlic clove, finely chopped
    • 1 lime, juiced
    • 1 teaspoon ground coriander
    • 1 tablespoon chopped fresh coriander
    • 1 teaspoon chilli flakes
    • 1 teaspoon cumin seeds

    1. Put onion in a blender and pulse until very finely chopped.
    2. Add the rest of the ingredients and pulse until well combined but still a little chunky.

    Other ideas

    Turn this salsa into a soup. Add 500ml vegetable stock and heat through. Give it another whizz in the blender to make it smooth and pass through a sieve to get rid of pips and skin.
