Chicken and courgette curry

    This curry is fairly quick to make and delicious - always good if you want something yummy in a hurry.

    Serves: 4 

    • 300g diced chicken
    • 1 tablespoon olive oil
    • 1 onion, sliced
    • 2 garlic cloves, finely chopped
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground coriander
    • 1 green chilli, sliced
    • 200ml coconut milk
    • 200ml water
    • 1 small lemon, juiced
    • 150g courgette, cut into batons
    • 2 tablespoons chopped fresh coriander

    1. Stir fry the chicken in the olive oil until lightly brown on a medium heat.
    2. Add onion and garlic to the pan and stir until softened.
    3. Add turmeric, ground coriander and chillies and stir to coat the chicken.
    4. Add coconut milk, water, lemon juice and courgettes. Simmer for 10 minutes, until the chicken is no longer pink at the centre.
    5. Stir in the fresh coriander and serve with boiled rice.

    Other ideas

    Add another green chilli if you like hot hot curries.

    I found this recipe looking for a quick dish to use up some chicken and courgettes. It was really quick to make, true, but the sauce was really watery (I needed to thicken it with cornflour to serve) and the flavour really was quite bland, sorry! The whole family complained, profusely, about it which put me a in a big grump for the rest of the evening!  -  09 Aug 2013
