Posh spaghetti Bolognese

    My boyfriend and I made this Bolognese for one of our birthdays (can't remember whose now), and have cooked it for both our families since. They have all enjoyed eating it. Enjoy!

    Serves: 6 

    • 100ml olive oil
    • 2 large onions, chopped
    • 500g beef or lamb mince
    • 100ml red wine
    • 2 1/2 teaspoons dried oregano
    • 3/4 teaspoon paprika
    • 3/4 teaspoon salt
    • 3/4 teaspoon ground black pepper
    • 1.25kg chopped tomatoes
    • 3 cloves garlic
    • 1 teaspoon hot chilli paste
    • 3 teaspoons honey
    • 75g tomato puree
    • 3L water
    • 1 3/4 tablespoons olive oil
    • 3/4 teaspoon salt
    • 600g spaghetti
    • 1 1/2 tablespoons butter

    1. Pour the olive oil into a large saucepan and heat. Add the onions and lightly fry them. Add the mince and fry until browned and crumbly.
    2. Stir in the wine, oregano, paprika, salt, pepper, tomatoes, garlic, chilli paste, honey and tomato puree.
    3. Simmer for between 45 minutes and 2 hours. The longer it simmers for, the thicker and richer the sauce will be.
    4. Bring 3L water to the boil. Add remaining olive oil, salt and spaghetti. Cook until tender with a bite, about 10 minutes, or as recommended on the packet. Drain well.
    5. Melt the butter in the saucepan. Stir together the butter and spaghetti. Serve spaghetti with sauce on top.


    A few splashes of Worcestershire sauce can also be added to the sauce.
