Norma's gingerbread cake

    This is my gingerbread cake recipe. It's lovely warm or cool, just as it is or served with lemon curd.

    Makes: 1 cake

    • 100g (3 1/2oz) margarine
    • 100g (3 1/2oz) dark brown soft sugar
    • 3 tablespoons golden syrup
    • 150ml milk
    • 1 egg
    • 140g (5oz) plain flour
    • 2 teaspoons ground ginger
    • 2 teaspoons ground cinnamon
    • 1 teaspoon bicarbonate of soda

    1. Preheat the oven to 180 C / Gas 4. Grease and flour a loaf tin.
    2. Put margarine, sugar and syrup in saucepan; heat slowly until melted.
    3. Add milk and mix well. Leave in jug to cool.
    4. Crack egg into a cup and whisk.
    5. Put flour, ginger, cinnamon and bicarbonate of soda in a bowl. Add liquid and egg; mix well with hand whisk. Pour into loaf tin.
    6. Bake for one hour. Leave to cool before icing.

    Yum!!!! but please add oven temp time had to kinda guess. But turned out good  -  29 Apr 2012
