About this recipe: Delicious chocolate chip cookies with a vanilla and dark chocolate marble effect. The vanilla dough is studded with chocolate chips; the chocolate dough is flavoured with almond extract.

Makes: 30 biscuits

  • 225g butter
  • 225g caster sugar
  • 100g dark brown soft sugar
  • 2 eggs
  • 275g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 150g dark chocolate chips
  • 75g cocoa powder
  • 1/2 teaspoon almond extract

  1. In a large bowl cream the butter and sugars until light and fluffy, add the eggs (one at a time) and mix in thoroughly.
  2. Sieve 200g of the flour, the bicarbonate of soda and salt into the mixture, mix together until all the dry ingredients are fully incorporated and the mixture is smooth. Remove half the mixture to a 2nd mixing bowl.
  3. Add the remaining 75g flour, the vanilla extract and chocolate chips to the original bowl; mix in fully. This should form a stiffer cookie dough. Place in fridge to allow dough to start to solidify.
  4. Into the 2nd bowl, add the cocoa and almond extract, mix thoroughly and then place in fridge for 15 minutes.
  5. After 15 minutes, remove both mixtures, tip the chocolate dough back into the original bowl and gently fold together. Do not over-mix as the doughs should blend into a marbled pattern. Return to the fridge for another 20 minutes.
  6. Preheat the oven to 180 C / Gas 4. Place teaspoon-sized balls on a baking tray 3cm apart.
  7. Bake for 10 to 12 minutes. Cool for a few minutes on the baking tray, then remove to a wire rack to cool completely.
