Heat the oil in the frying pan and gently cook the garlic and onion for 5 minutes.
Add the pepper and fry for a further 5 minutes.
Place the chicken, yoghurt, onion mixture, herbs and cheese in a bowl and season with salt and pepper.
Add the breadcrumbs and mix well. If you are using sliced bread rather than bought breadcrumbs, whizz in a food processor or tear in half and rub together until fine.
Divide into 6 balls and shape into burgers. Chill for 20 minutes.
Place under a medium grill for about 8 minutes on each side until browned and cooked through.
You can use egg yolks instead of the Greek yoghurt like I did, as you are more likely to have the ingredients already and 2 tablespoons of Greek yoghurt is a bit of a waste if that is all you are buying it for.
You could also BBQ these burgers or bake them in the oven. I have not baked them before but I would imagine 15 to 20 minutes on a baking tray at 180 C until browned should do.
