    About this recipe: Delicious breakfast or brunch of fried tomato, onion and basil with a fried egg. I have served here with two savoury red pepper and Parmesan cupcakes halved and fried (see separate recipe) or equally nice with toast or a muffin.

    Ingredients
    Serves: 1 

    • Olive oil for frying
    • 1 onion, peeled and sliced
    • 5 vine ripened cherry tomatoes, quartered
    • 1 pinch sugar
    • Salt and black pepper to taste
    • 3 to 4 fresh basil leaves, finely chopped
    • 1 egg
    • extra basil for garnish (optional)
    • Savoury cupcake, muffin or toast

    Method

    1. Heat a frying pan over medium heat, add olive oil and pan fry the onion until softened. Add the tomatoes and cook for a couple of minutes. Add the sugar, seasoning and chopped basil. Cook until onions are cooked through and tomatoes cooked down.
    2. Keep heat low and add the egg; fry to your liking.
    3. Plate up, garnish with basil leaves and serve with a savoury cupcake, muffin or toast. Delicious.
