Delicious breakfast or brunch of fried tomato, onion and basil with a fried egg. I have served here with two savoury red pepper and Parmesan cupcakes halved and fried (see separate recipe) or equally nice with toast or a muffin.
Heat a frying pan over medium heat, add olive oil and pan fry the onion until softened. Add the tomatoes and cook for a couple of minutes. Add the sugar, seasoning and chopped basil. Cook until onions are cooked through and tomatoes cooked down.
Keep heat low and add the egg; fry to your liking.
Plate up, garnish with basil leaves and serve with a savoury cupcake, muffin or toast. Delicious.
