Blue cheese and brandy savoury cupcakes

    Savoury, delicious cupcakes made with blue cheese and a dash of brandy. Nice alternative to a plain dinner or soup roll or something different to serve at a BBQ. Make a batch and freeze. I have made in a cupcake maker but can equally be made in an oven.

    Makes: 6 Individual Rolls

    • 60g self raising flour, sifted
    • 1 teaspoon baking powder
    • 2 eggs, beaten
    • 2 tablespoons blue cheese (eg Gorgonzola, Danish blue)
    • freshly ground pepper to taste
    • 1 capful brandy (optional)
    • 75g butter, softened

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Preheat a cupcake maker or moderate oven (180 C / Gas 4). Mix all the ingredients together. Divide between 6 cupcake cases.
    2. Bake for 12 to 15 minutes. Test cooked when pierced with a skewer and comes away clean. Cool on a wire rack.
