About this recipe: Delicious, savoury cupcakes with a bacon, cheese, potato and sweetcorn filling. Ideal alternative to dinner or soup roll or serve at a BBQ. Make a batch and freeze. Have made here in a cupcake maker however can equally be baked in the oven.

Makes: 6 cupcakes

  • 2 eggs, beaten
  • 60g self raising flour
  • 75g butter, softened
  • 1 tsp baking powder
  • freshly ground pepper to taste
  • 2 tablespoons finely chopped cooked bacon
  • 1 heaped tablespoon cooked and finely chopped potato
  • 1 heaped tablespoon sweetcorn
  • 2 tablespoons grated cheese

Prep:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Mix all ingredients together and divide between 6 cupcake cases. Bake in a cupcake maker or moderate oven (180 C / Gas 4) for 12 to 15 minutes.
  2. Check cooked properly by inserting a skewer in the centre; if comes away clean it is cooked. Cool on a wire rack.
