Liam's fried chicken

    I'm using my mum's logon to submit this recipe. To be honest she should have the credit, as it's just a tweaked version of one of my favourite meals she cooked when I was home :). A quick and easy meal I now cook regularly.

    Serves: 2 

    • 1 tablespoon plain flour
    • 1 1/2 teaspoons ground cinnamon
    • 1 1/2 teaspoons ground coriander
    • 1 1/2 teaspoons dried sage
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon Cayenne pepper
    • 3 chicken breast fillets, diced
    • olive oil as needed
    • salt and pepper to taste

    1. Mix the dry ingredients in an air-tight bag or a bowl.
    2. Dice the chicken and add to the bag. Try to coat all the pieces as best you can.
    3. Heat olive oil in a frying pan over medium high heat, and shallow fry the chicken pieces until crispy and golden, ensuring the chicken is no longer pink at the centre, and serve.


    The smaller you cut the chicken, the more coating they get and the tastier they are ;)


    You can use fresh herbs and fine chop them. I prefer dried as it's easier to mix together.

    Serving suggestion

    I normally serve this with boiled new potatoes and a green salad with a balsamic dressing, depending what I have in.
