About this recipe: If you love courgettes and pasta, then this pasta bake recipe could be perfect for you as an easy lunch or dinner. Kids love it too!

Serves: 4 

  • 225g (8oz) uncooked pasta
  • 1 vegetable stock cube
  • 4 courgettes, diced
  • 2 red onions, finely sliced
  • 2 garlic cloves, crushed
  • 1 red chilli, sliced
  • 1 tablespoon chopped fresh basil
  • 600g tomato passata
  • 1 pinch salt and freshly ground black pepper
  • 3 tablespoons virtually fat-free fromage frais
  • 2 tablespoons chopped fresh parsley

  1. Preheat the oven to 190 C / Gas 5.
  2. Cook the pasta in a pan of boiling water containing the stock cube, then drain.
  3. Preheat a large non-stick pan. Dry-fry the courgettes, onion and garlic in the pan for 3 to 4 minutes.
  4. Add the chilli, basil and tomato passata.
  5. Bring the sauce to a gentle simmer, then stir in the cooked pasta and season with salt and black pepper. Transfer to an ovenproof dish.
  6. Bake in the oven for 30 minutes.
  7. Just before serving, dot with fromage frais and sprinkle with chopped fresh parsley.
  8. Serve with fresh vegetables or salad.

This is delicious and so versatile. I've made it 3 times - once following the recipe to the letter, the second time by replacing the courgette with mushrooms and peppers and the third by substituting the courgette with red pepper and chorizo. 5 stars every time! - 26 May 2014
