Lime and rum ice cream

A creamy dessert with a wonderful zesty kick. There's plenty of tart fresh lime juice in this ice cream!

Ingredients
Serves: 8
- 100ml freshly squeezed lime juice
- zest of 2 limes
- 4 tablespoons white rum
- 3 large eggs, separated
- 100g icing sugar, sifted
- 300ml double cream
- lime zest to garnish

- Put the juice, zest and rum in a small container, cover and put in the freezer.
- Whisk the egg whites until they form stiff peaks. Gradually whisk in the icing sugar, a tablespoon at a time, whisking until stiff each time.
- In another bowl, whisk the cream into floppy peaks. Lightly beat the yolks and fold into the cream, together with the egg whites and rum mixture.
- Freeze in a covered container for at least 5 hours.
- Serve with zest.
Tip
Make sure all bowls are very cold before starting.
Freezing tip
If you have an ice cream maker, it will cut down the time to about 90 minutes. Do everything as in the recipe but place the mixture into the ice cream maker.
