Massaman Curry

    This is a basic Massaman curry recipe that calls for beef, but you can use cubed chicken breast or thigh, or lamb just as well. Use your favourite Massaman curry paste, and you'll be rewarded with a delicious Southern Thai curry that is easy to make!

    • 250ml coconut milk
    • 2 tablespoons Massaman curry paste
    • 450g beef, cut into cubes
    • water to cover (around 200ml)
    • 1/2 teaspoon ground cardamom
    • 3 bay leaves
    • 1 cinnamon stick
    • 2 tablespoons sugar
    • salt to taste
    • 1 tablespoon tamarind paste (optional)
    • 1 large potato, peeled and cut into chunks

    1. In a large saucepan or casserole, heat the coconut milk and curry paste over medium heat. Stir to dissolve the paste. Simmer for 5 minutes, but don't let boil.
    2. Add the beef, along with water to cover. Add the cardamom, bay leaves, cinnamon, sugar, salt and tamarind paste (if using). Simmer, covered, for 30 minutes or until beef is tender.
    3. Add the potato pieces, then bring back to a simmer and cook for 20 to 30 minutes more, uncovered. The liquid should reduce a bit, but if you find it has reduced too much, you can add a little more water.
    4. Serve with jasmine rice, and enjoy!
