Preheat the oven to 180 C / Gas 4.
Whilst waiting for oven to heat up, prepare the veg and pork. Chop the onion into slices and slice the mushrooms. Heat a little oil in a frying pan on a high heat and place the pork chops in the frying pan to brown the meat. Once the meat is browned, place in a casserole dish and add the mushrooms and onions.
Add the chicken stock cube and sage to the boiling water. Stir until the stock cube is dissolved. Add to the casserole dish and cover.
Bake in the preheated oven for 2 hours, adding extra water if needed.
Once cooked serve on a plate and serve the mushrooms, onions and juices from the casserole dish as a sauce.
