Place a pan of water on the hob and bring to a boil. Once boiling, add the potatoes and boil for 10 minutes. After 10 minutes, add the eggs, leaving the potatoes in, and boil for another 10 minutes. After 10 minutes, drain the water and place the potatoes and eggs in a bowl of cold water.
Whilst the eggs and potatoes are cooling, slice the spring onions thinly and add to a mixing bowl. When the eggs and potatoes are cooled, place the potatoes on a chopping board, slice into quarters and put in the mixing bowl. Peel the eggs, break up the egg and put in the mixing bowl. Add mayonnaise, salt, pepper to taste and mix well together, slightly crushing the potatoes.
