Reggae Reggae chicken pie

    This is a delicious spicy pie topped with creamy mashed potato. Might sound a bit strange but it's very tasty! The 2 flavours compliment each other very well! The cooking time is only a rough guide, 20 minutes or so chopping it all up and peeling potatoes, and then an hour because you need to fry it all up in a pan, make the mash, then stick it in the oven for a bit. Portion size is also relative - it makes 2 hefty portions, so could feed 4 if you were serving up sides. Corn on the cob would go well!

    Serves: 2 

    • 4 medium potatoes
    • 1 tablespoon chilli powder
    • salt and pepper
    • 1 tablespoon oil
    • 2 chicken breast fillets, diced
    • 1 onion, chopped
    • 1 tablespoon mixed herbs
    • 1 clove garlic, crushed
    • 1 green pepper, chopped, or half and half any colour peppers
    • 1 (400g) tin chopped tomatoes
    • 1 tablespoon tomato puree
    • 2 tablespoons Reggae Reggae® sauce
    • 1 tablespoon butter
    • 1 splash milk
    • 1 handful grated cheese, such as Cheddar or Mexicana.

    1. First, peel and boil the potatoes (I recommend doing this first as I usually forget!). Add the chilli powder and a little salt and pepper to the water.
    2. While the potatoes are bubbling away, heat the oil (olive, sunflower, vegetable, whatever you have handy) in a deep frying pan, throw in the chicken, onion, mixed herb, garlic and peppers and cook and stir until the chicken is no longer pink at the centre, about 20 minutes. Add the chopped tomatoes, tomato puree and Reggae Reggae sauce. You can add as much or as little as you like.
    3. Leave this to simmer. The potatoes should be done by now, so remove from the heat and mash them, adding the butter and milk.
    4. Preheat the oven to 180 C / Gas 4.
    5. Transfer the chicken mixture to a casserole dish (one large enough to hold that and the mash) then top with the mash potato and sprinkle the cheese on top.
    6. Place in the oven for 20 minutes, or until the cheese is all melty and nice.


    Before adding the tomatoes, you can stir in a few rashers of chopped bacon for a tasty addition.


    Try grating a bit more cheese and stirring it into the mash before topping the pie.


    For a spicier flavour, marinate the chicken in Reggae Reggae sauce beforehand. (I never do this as it's usually a last minute idea to cook!)
