Sugar free peanut butter cookies

    Just three ingredients come together for these sugar free cookies. You can find sucralose sweetener in large supermarkets. If your peanut butter has any sugar in it, you may want to decrease the amount of sweetener.

    Makes: 24 cookies

    • 550g natural, unsweetened peanut butter
    • 50g sucralose sweetener, such as Splenda
    • 2 large eggs, beaten

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray, or line with parchment.
    2. Thoroughly mix together the peanut butter, sweetener and eggs in a bowl. Drop mixture by spoonfuls onto the prepared baking tray.
    3. Bake in the preheated oven until centre appears dry, about 8 minutes. Cool completely.

    Sugar Free Cookies were easy to make with only 3 ingredients which was good. The outcome was a crunchy cookie and taste wise it was okay, it wasn't the best peanut butter cookie that I have had but for a treat in the evening when you fancy something sweet with not to much time to make it, with a few ingredients, it was a okay cookie. Cooking time took a little longer about 15 minutes. Has abit of a bitter after taste though.  -  14 Oct 2012
