Sugar Free Shortbread Biscuits

    Four ingredients result in sugar free shortbread biscuits that are perfect to enjoy with your tea. These aren't overly sweet. You can find the sugar substitute in larger supermarkets.

    Makes: 20 biscuits

    • 4 tablespoons sugar substitute, such as Splenda
    • 160g butter, room temperature
    • 200g plain flour
    • 1 pinch salt

    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Beat the butter and Splenda with an electric mixer till light and fluffy. Gradually add the flour and salt.
    3. Flour your work surface, and roll out the mixture to a large rectangle, about 1-2cm thick. Slice into fingers.
    4. Transfer the biscuits to the prepared baking tray. Chill in the fridge for 15 minutes, then bake for 15 minutes, until lightly golden. Cool and store in an airtight container.

    lacked a bit of flavour so added cinnamon as well as vanilla and also dredged top after with cinnamon and sweetner which made them tasty. too crumbly will add egg next time. overall very nice but need some work  -  28 Nov 2011


    I found if you dipped them in chocolate after cooking added good flavour if cant have sugar as my friend has intolerence and i baked them for her use a thin layer of 70% dark chocolate she loved it so did I if you can have like me i sprinkle some sweetner on top and thought that was great too  -  30 Sep 2014
