About this recipe:Kids and adults alike will adore this irresistible ice cream cake, which is loaded with Oreo® cookie crumbs. For a nice presentation, buy a packet of mini Oreos, then arrange them over the top of the cake!
300g Oreo® cookies
25g butter or margarine, melted
200ml chocolate sauce
2 litres vanilla ice cream
200ml whipping cream, whipped

Crush the cookies to make crumbs. Combine half of the crumbs with melted butter and press into the bottom of a 20cm springform cake tin. Spread 3/4 of the chocolate sauce over the base. Freeze 15 minutes.
Meanwhile, soften 1 litre of ice cream in the microwave or at room temperature. After the base has chilled, spread softened ice cream over chocolate layer. Sprinkle with half of the remaining cookie crumbs. Freeze 30 minutes.
Scoop remaining litre of ice cream into balls and arrange over spread ice cream layer. Freeze until firm, 4 hours or overnight.
To serve, garnish with remainder of chocolate sauce, cookie crumbs and whipped cream.
