    4 hours 10 min

The pizza dough is made in the bread machine and then stuffed with 4 different types of cheese. Calzones are really versatile so you can experiment with the fillings. Handy for parties.

    1. Place the water, olive oil, salt, oregano, bread flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select the dough cycle.
    2. Meanwhile, to make the filling, squeeze out excess water from broccoli. In a large frying pan, cook the broccoli and garlic with the olive oil. Stir in all the different cheeses.
    3. Once bread cycle has finished, remove dough from machine and roll out to a 20cm circle. Spread filling on one half of the circle leaving a border around it for closing. Close the calzone by folding the unfilled side on top of the filled side. Crimp the edges closed with your fingers or a fork. Place on a lightly greased baking tray. Let rise in a warm area for 30 minutes.
    4. Preheat oven to 260 degrees C.
    5. Brush top lightly with olive oil. Bake for 20 to 30 minutes, or until golden brown.

    Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

i thought this was excellent-i used store bought frozen pizza dough and thawed it according to package directions.I also just spiced up the dough w/basil,oregano and italian seasoning-and omitted the provolone cheese-and baked at 450-not 500 degreesfor about the same time-will definately make again!  -  27 Oct 2005  (Review from Allrecipes US | Canada)

These were good but would be better w/ marinara sauce in them. Next time I would not mix the ricotta w/ the other cheeses, rather spread it beside the filling.  -  14 Jan 2002  (Review from Allrecipes US | Canada)

The crust is great on these, but the filling was a little bland. Will make it again but with spinach instead of the broccoli, and more garlic.  -  19 May 2004  (Review from Allrecipes US | Canada)
