Canarian potatoes (Tenerife) (papas arugardas)

    Salted small potatoes that are served throughout Tenerife. They are great on their own or served with mojo sauce. They can also be served with any main dish.

    Serves: 4 

    • small potatoes in their jackets
    • 2 tablespoons sea salt

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Use only small potatoes and wash them thoroughly.
    2. Place potatoes in a pot. Cover with water and add 2 tablespoons of sea salt. Boil for about 20 minutes until tender.
    3. Pour off most of the water and return to heat. Keep moving the potatoes around as the water evaporates. You will see the salt appear on the potatoes. Magic!

    If you shut your eyes you ARE back in Tenerife when you munch on these! Divine just before serving I added a teaspoon of olive oil and stirred!  -  14 Jul 2014
