Strawberry Eton mess

    This traditional English dessert has a twist with a touch of added vinegar to the strawberries to make the taste POP!!! Enjoy this when strawberries are local and in season.

    Serves: 6 

    • 500g strawberries
    • 1 teaspoon vinegar
    • 400ml double cream
    • 3 meringue nests, crushed into chunks

    1. Hull the strawberries and puree half in a blender. Dice the other half and leave them to marinate in a bowl with the teaspoon of vinegar.
    2. Whip the double cream until stiff and fold in the puree, crushed meringue and the marinated strawberries (the vinegar brings out the taste in the strawberries).
    3. Split into cold wine glasses and serve.
