Gluten free almondy cake

    A very light and tasty cake that's gluten free and also suitable for someone on a cow's milk-free diet.

    Serves: 6 

    • 100g dairy free margarine
    • 100g caster sugar
    • 100g rice flour
    • 100g ground almonds
    • 3 eggs
    • 2 tablespoons goats milk
    • 2 to 3 teaspoons gluten-free baking pwder

    1. Preheat the oven to 180 C / Gas 4. Grease and line a cake tin.
    2. Cream margarine and sugar. Add rice flour, ground almonds, eggs and goats milk and mix together thoroughly.
    3. Add baking powder. Tip the mixture into the cake tin. Place the cake into the oven as quickly as possible for best results.
    4. Bake until a skewer inserted near the centre comes out clean, 20 to 40 minutes.


    This recipe will also make 12 muffins.
