Date cake

    1 hour 5 min

A wonderfully light and delicious date cake that's easy to make. It's my family's favourite cake recipe. You'll become addicted to it, as long as you love dates.

    2. With an electric mixer, beat sugar and butter till light and fluffy, add eggs one by one while continuing beating.
    3. Add vanilla, milk and dates; beat till well combined and add nuts. Add flour mixture and beat for two minutes, then mix using a spoon. Tip into the prepared tin.

This recipe was easy to follow and the end result was delicious. I used date paste and it was a lot quicker and easier to use than pitted dates. I split the mixture into two small foil containers, one of which I put in the freezer for a later date. This cake was moist and my friends found it very moorish. I look forward to making it again as I'm sure the cake in the freezer won't be in there for too long!  -  25 Jun 2012
