About this recipe:
A wonderfully light and delicious date cake that's easy to make. It's my family's favourite cake recipe. You'll become addicted to it, as long as you love dates.
175g plain flour
3 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
100g dark brown soft sugar
1 teaspoon vanilla extract
175g dates, pitted and chopped (I use dates that are sold ready for baking)
60g slivered or chopped almonds
60g walnuts, chopped

Preheat the oven to 180 C / Gas 4. Grease a loaf tin. Sieve together the flour, baking powder, bicarbonate of soda and set aside.
With an electric mixer, beat sugar and butter till light and fluffy, add eggs one by one while continuing beating.
Add vanilla, milk and dates; beat till well combined and add nuts. Add flour mixture and beat for two minutes, then mix using a spoon. Tip into the prepared tin.
Bake until a skewer inserted near the centre comes out clean, 40 to 45 minutes. Ingredient note
If the dates you are using are dry, chop them and soak them in the milk with 1/2 teaspoon bicarbonate of soda for an hour, other wise move to the next step.

This recipe was easy to follow and the end result was delicious. I used date paste and it was a lot quicker and easier to use than pitted dates. I split the mixture into two small foil containers, one of which I put in the freezer for a later date.
This cake was moist and my friends found it very moorish.
I look forward to making it again as I'm sure the cake in the freezer won't be in there for too long!
